Key Responsibilities
- Boning: separate carcasses and quarters without supervision
- Boning: debone with accuracy and turn out commercial cuts of beef/veal, lamb/sheep and pork, taking care of yield and quality
- Slicing and trimming: shape meat products to what customers and production ask for
- Slicing and trimming: take off surplus fat, gristle and unwanted pieces, keep waste low and deliver the same quality each time
- Slaughter floor: handle work for each species, including stunning and shackling where you are authorised
- Slaughter floor: complete sticking and bleeding, hide removal or skinning, carcass dressing and evisceration
- Work to safe food handling practices
Requirements & Eligibility
- Commercial meat worker experience and practical skills suited to the role
- Boners: strong knife skills with accurate bone removal and trimming ability
- Ability to identify the species you have worked with, plus your cuts and duties
- A verifiable employment history and references (where available), and qualifications and skills assessments (if available)
- Q Fever vaccination or immunity evidence, where required for the role
