A farm-to-table fine dining venue in Victoria is looking for a Restaurant Manager in Melbourne. The employer wants a proven front-of-house leader whose track record, qualifications and leadership can be verified, someone who can shape the guest experience, grow the team and uphold the standards of a premium restaurant. Key Responsibilities
- Lead front-of-house service and set a high, consistent standard for every shift, with refined and attentive guest care
- Handle reservations, seating plans, guest preferences, VIP arrangements and special requests
- Stay close to guests through the meal and lead visibly on the floor
- Run pre-service briefings and share operational priorities with the team
- Train, coach and mentor front-of-house staff
- Work hand in hand with the kitchen so service runs seamlessly
- Build weekly rosters around bookings, events, seasonal demand and operational needs, and monitor labour performance
- Oversee beverage and front-of-house stock and purchasing, watching wastage, breakage and usage to manage cost
- Keep operational systems running and daily reporting accurate, and look for ways to lift service consistency, efficiency and guest satisfaction
- Maintain food safety, hygiene, workplace health and safety and responsible service standards, complying with venue procedures, licensing requirements and applicable regulations
Requirements & Eligibility
- Demonstrated experience as a Restaurant Manager, Assistant Restaurant Manager, Maître d' or senior front-of-house leader
- Strong fine dining, premium restaurant or high-standard hospitality background; international hospitality experience is highly desirable
- Proven ability to lead and develop front-of-house teams
- Solid grasp of restaurant operations, labour planning, stock control and cost management
- Confident wine knowledge and experience presenting international wine selections; Minimum WSET qualification required
- Excellent English communication; extra European language skills will be advantageous
- Composed and professional in guest service and team leadership
- Close attention to detail and commitment to premium hospitality standards
- Can provide evidence of relevant employment history, qualifications and professional experience for verification
