Laminated dough is the star of this Pastry Chef role in Queenstown. You would make croissants, viennoiserie and Danish pastries from scratch, plus tarts, pies, choux and filled pastry, working through mixing, resting, shaping, proofing and baking as part of an experienced bakery team.

Key Responsibilities

  • Make high-quality pastry from scratch to the bakery's production standards
  • Produce croissants, viennoiserie and Danish pastries with professional technique
  • Take laminated dough through every stage: mixing, resting, shaping, proofing and baking
  • Prepare tarts, sweet pastries, pies, choux and filled pastry products
  • Create seasonal and speciality pastry items
  • Keep quality, weight, appearance, texture and presentation consistent
  • Check pastry at each stage of production, making sure fermentation, proofing and baking times and temperatures are right
  • Run bakery and pastry equipment safely and effectively
  • Keep an eye on production schedules, temperatures and allergen requirements
  • Hold to strict food safety, hygiene and cleanliness standards, keeping workstations organised and compliant
  • Work with other pastry and bakery colleagues to hit daily production targets
  • Look for ways to improve product consistency and production efficiency
  • Help track stock and order ingredients and supplies, and add to a positive team culture

Requirements & Eligibility

  • Minimum 3 years of professional Pastry Chef experience
  • Commercial background in a bakery, patisserie or professional kitchen
  • Solid practical grounding in viennoiserie and laminated pastry production
  • Has made croissants and other laminated pastries in a working kitchen
  • Understands pastry preparation, fermentation, proofing, lamination and baking well
  • Produces quality pastry from scratch consistently
  • Careful about detail and presentation
  • Keeps quality and output up in a high-volume environment
  • Understands food safety, hygiene and allergen-control practices
  • Professional, reliable and hard-working, with good communication and organisational skills
  • Fits comfortably into a multicultural, collaborative team
  • A formal pastry or baking qualification is advantageous
  • Flexible for early mornings, afternoons, weekends and rotating shifts, and available for full-time employment
  • Candidates must be able to demonstrate relevant skills and experience for the position
