A busy hospitality business in Mackay wants experienced Indian cooks for permanent roles. It is hiring Indian Curry Chefs and Cooks, Tandoori Chefs and Cooks and Indian Cuisine Sous Chefs, and a Malaysian cook with a strong curry or tandoor background would fit in well.

Key Responsibilities
- Cook the full Indian menu: curries, tandoori items, sauces, breads, rice, entrees and desserts, all true to authentic recipes
- Fire and look after the tandoor ovens where the menu calls for them
- Plate each dish to the house recipe, portion size and presentation standard
- Contribute to menu planning with ingredient spend and staffing costs in mind
- Keep an eye on preparation and plating so every plate looks and tastes the same
- Keep stock levels sensible and waste low
- Look over ingredients for freshness before use and keep food in suitable temperature-controlled storage
- Hold the line on hygiene, cleanliness and safety, and keep equipment and work areas spotless
- Coach, supervise and back up junior cooks when needed
- Deal with food quality complaints and guest feedback in a calm, professional way
- Map out daily and weekly kitchen production with management, staying organised and on time in a fast-paced commercial kitchen
Requirements & Eligibility
- At least three years cooking authentic Indian cuisine
- A working history as an Indian Curry Chef, Tandoori Chef, Indian Cook or Sous Chef
- A Commercial Cookery or Hospitality qualification suited to the position
- Confident command of traditional Indian methods and authentic recipes
- Excellent organisational and communication skills, plus the stamina for a busy, high-volume kitchen
- A firm commitment to food safety, hygiene and workplace health and safety
- Comfortable supervising and training junior kitchen staff where required
- For overseas applicants, a positive skills assessment is required
- For overseas applicants, an IELTS score of 5.5 or 6.0 in each module, or an equivalent PTE score, is required
