Key Responsibilities
- Be accountable for daily kitchen operations and performance in every service period
- Lead the team and organise daily staffing
- Keep production consistent, with portion control and presentation checked
- Build efficient kitchen systems, standard recipes and operating procedures
- Run purchasing, supplier relationships, inventory, stock rotation and ordering
- Hold food costs and labour costs in check, cut waste and track budgets and financial targets
- Refresh menus and seasonal offerings
- Train and mentor staff, recruit and onboard new team members, and run performance and development reviews
- Meet food safety and HACCP requirements
- Uphold workplace health and safety standards
Requirements & Eligibility
- A proven record as a Head Chef or Senior Sous Chef
- Time spent running a busy restaurant kitchen
- Sound operational and financial management skills
- Demonstrated experience in controlling food costs and kitchen labour costs
- Able to lead a team and manage staff effectively
- Has developed and rolled out kitchen systems before
- Confident managing suppliers and purchasing
- Excellent grasp of food safety and the principles of HACCP
- A good understanding of modern Australian cuisine
- Able to build quality menus that make commercial sense
- Sharp problem-solving
- Well organised, a clear communicator and able to hold high standards under pressure
