Key Responsibilities
- Direct the daily artisan bread team and hit production targets without dropping premium quality
- Bake sourdough loaves and yeast-based artisan breads through natural fermentation
- Look after every stage from mixing the dough through fermenting, shaping, proofing and baking in the ovens
- Rotate through all production areas with the team
- Mentor and develop bakers
- Keep food safety, hygiene and quality assurance at a strict standard
- Watch ingredient stock levels and place orders
- Plan production schedules and staff rosters
- Team up with production leaders to smooth workflow and raise efficiency
- Bring ideas for seasonal lines and bakery innovation, keeping handcrafted products consistently high in quality
Requirements & Eligibility
- A proven background in a professional artisan bakery
- In-depth knowledge of producing naturally fermented and yeast-based bread
- A record of leading, supervising or mentoring bakery teams
- Excellent grasp of dough hydration, fermentation and artisan baking techniques
- Confidence producing wholegrain and specialty breads
- Strong organisational and production planning skills
- Hands-on stock control and ingredient ordering
- Can prepare staff rosters and coordinate daily operations
- A creative mindset with an interest in product development
- Excellent communication and teamwork skills, plus a commitment to producing premium handcrafted bakery products
