A newly opened premium Italian restaurant in Sydney, NSW is searching for a General Manager to build the operation from day one. You would shape the front-of-house structure, hire the opening team, put systems in place and keep costs and service standards under control.
The owners want proof of venues you have led, openings you have run and the teams you have managed. Sponsorship is available for the right candidate. Wine, spirits and cocktail knowledge matters as much as rosters and margins.

Key Responsibilities
- Lead the pre-opening build-up and make sure the venue is operationally ready
- Design the FOH structure, floor plans and service flow
- Hire and shape a high-performing opening team
- Interview, induct, train and develop hospitality staff
- Define clear service expectations and performance standards
- Draft SOPs and practical daily routines
- Run opening and closing systems across the venue
- Lead the large FOH and bar teams through daily service
- Build rosters, watch staffing levels and keep labour costs and productivity on target
- Run the POS and operational systems
- Manage the premium beverage offer across wine, spirits and cocktails, tracking beverage costs, GP, pricing and margins
- Look after purchasing and supplier relationships, negotiating for commercial results
- Watch service quality, guest experience and overall performance
- Keep RSA, WHS and compliance requirements covered
- Spot gaps in operations and introduce practical fixes
- Coach managers and staff to build a consistent service culture, staying hands-on during service while keeping commercial oversight
Requirements & Eligibility
- A strong track record in senior restaurant or hospitality management
- Managed premium or high-volume restaurants before
- Experience opening or establishing a new hospitality venue, backed by a verifiable history of venues managed, launched or operationally led
- Experience leading substantial FOH and bar teams
- Recruiting, staff training and leadership experience
- A hands-on understanding of restaurant floor operations
- Strong knowledge of wine, spirits, cocktails and beverage service
- Experience managing beverage GP, costing, pricing and margins
- Practical experience with rosters, labour budgets and staff cost control
- Experience with POS and restaurant management platforms
- Purchasing and supplier negotiation experience
- Sound understanding of RSA, WHS and restaurant compliance
- The ability to build systems and procedures from the ground up, with commercial awareness and operational decision-making skills
- The ability to demonstrate previous hospitality leadership through a credible career history
