This Sydney Chef position sits at the top of a hospitality group's kitchens: seven food and beverage outlets, a kitchen team of more than 60 people and output above 12,000 meals per week. It calls for a leader who can combine team leadership, commercial decisions and tight operational control with consistent results.

Key Responsibilities

  • Take charge of kitchen operations at seven food and beverage outlets
  • Coach, supervise and grow a kitchen workforce of more than 60, hiring at several levels
  • Make sure every venue delivers the same food quality, presentation and service
  • Guide menu development and carry it through across the operations
  • Keep a firm grip on food costs, labour spend, purchasing and inventory, and track kitchen budgets to protect profit
  • Put strong kitchen systems, procedures and performance standards in place
  • Stay on top of food safety, workplace health and safety and regulatory compliance
  • Partner with venue managers and senior leaders on operational targets
  • Look for smarter ways to improve productivity, workflow and cost management
  • Keep standards high in a large, fast-moving hospitality operation while promoting an accountable, positive kitchen culture

Requirements & Eligibility

  • You have worked as a Group Executive Chef, Executive Chef or in a comparable senior culinary position
  • You have been responsible for large kitchen teams, complex operations and high-volume food production
  • Solid knowledge of food costing, budgeting, labour control and purchasing, plus a commercial view of kitchen profitability
  • A record of menu development and consistent food standards
  • Able to recruit, train, mentor and retain kitchen staff
  • Strong organisational, communication and people-management skills
  • Leads strategically but stays hands-on when needed
  • Multi-venue hotel or hospitality experience is highly regarded
  • Understands food safety, workplace health and safety and regulatory requirements
  • International recruitment or sponsorship experience is advantageous
  • Can provide verifiable evidence of relevant employment experience and senior responsibilities
