A premium hospitality operation in Sydney is looking for a trade-qualified Sous Chef with proven kitchen experience, leadership ability and a real passion for Asian fusion cuisine. You would help lead the kitchen, service, menu development and team performance while working alongside experienced senior chefs.

Key Responsibilities

  • Run kitchen operations competently during service
  • Lead and coordinate the brigade for an orderly workflow
  • Oversee prep and check that dishes meet quality and presentation standards
  • Develop the menu and new dish concepts with senior culinary leadership
  • Bring strong knowledge of Asian flavours, ingredients and cooking methods to the pass
  • Keep recipes, portions, flavours and plating consistent
  • Coach, train and mentor junior chefs and developing staff
  • Allocate duties to match service demands, and assist with rostering
  • Work with front-of-house so service stays smooth
  • Track stock levels, ordering and ingredient availability
  • Help with food costing and portion control and reduce wastage
  • Offer menu planning ideas and ways to lift kitchen performance
  • Keep kitchen procedures accurate throughout service
  • Meet food safety, hygiene and workplace health and safety requirements in a clean, safe, orderly kitchen
  • Foster accountability and high standards in the team, and support senior management with operational, culinary and guest satisfaction goals

Requirements & Eligibility

  • Trade-qualified Chef with relevant recognised qualifications
  • Minimum 2 years' experience as a Junior Sous Chef or Senior Chef de Partie
  • Solid hands-on experience in a commercial restaurant kitchen
  • Demonstrated experience of Asian or Asian fusion cuisine, or substantial exposure to it
  • Knows Asian ingredients, flavours, preparation methods and cooking techniques well
  • Consistently delivers high-quality food in demanding service
  • Has supervised or supported other kitchen team members before
  • Understands kitchen operations and service coordination well
  • Knowledge of ordering, stock control, food costing and waste management, plus menu planning and portion control
  • Strong communication and leadership
  • Professional on food safety, hygiene and workplace safety
  • Can work rotating shifts, including weekends and public holidays
  • Reliable, professional and team-focused approach
