A premium hospitality venue in Melbourne is looking for a Senior Chef who has moved beyond purely hands-on cooking and is ready to lead people, hold high standards and help steer a professional kitchen. Time spent in Michelin-starred or comparable international fine-dining kitchens counts strongly in your favour, along with your qualifications and career record.

This role is open to chefs already working in Australia with a valid visa, and the ad says applicants must satisfy applicable requirements if considered for employer sponsorship.

Key Responsibilities

  • Lead the kitchen brigade through prep and service
  • Coach and develop junior chefs and commis chefs, setting a disciplined and respectful example
  • Keep food quality, presentation and consistency exceptional
  • Back up the Head Chef on daily kitchen operations
  • Contribute to menu planning, recipe development and new dish ideas
  • Watch preparation and cooking all through service and make sure the whole team follows kitchen procedures
  • Handle ingredient ordering, stock levels and rotation, and help with food costing and kitchen resources
  • Keep operational and compliance records accurate
  • Uphold food safety, hygiene and workplace health standards
  • Coordinate with the front-of-house team during service
  • Spot opportunities to lift kitchen efficiency and culinary standards

Requirements & Eligibility

  • Minimum 5–7 years' experience working in professional kitchens
  • Minimum 2–3 years' experience at senior chef, sous chef or supervisory level
  • Proven fine dining, Michelin-starred or equivalent high-end culinary background
  • Career progression showing increasing professional responsibility
  • Solid technical cooking skills covering contemporary methods
  • A leadership and team-development record, with the ability to train, mentor and motivate kitchen staff
  • Good knowledge of kitchen compliance, food safety and hygiene
  • Excellent organisation and communication
  • Stays composed and keeps standards high during demanding services
  • Hands-on experience of inventory management, stock control and kitchen costing
  • Awareness of current food trends and sustainable kitchen practices
  • A relevant culinary qualification, apprenticeship or equivalent professional training is preferred
  • Committed to quality, consistency and continuous improvement
  • Currently working in Australia with a valid visa
  • Can provide suitable evidence of professional experience and qualifications
