Key Responsibilities
- Own your part of the kitchen and what service demands of it
- Cook to a steady commercial standard
- Back up breakfast, lunch and dinner from prep through to service
- Organise mise en place and the day's food prep
- Portion, plate and finish dishes to the house presentation standard
- Turn out sauces, gravies, garnishes and the other building blocks of a dish
- Cater for dietary and special requests
- Inspect ingredients for quality and condition before they are used
- Keep an eye on stock levels and lend a hand with inventory
- Work and adjust the commercial ovens, grills and other cooking equipment
- Keep work areas and equipment clean, tidy and safe
- Liaise with chefs and other kitchen staff, and coach junior team members hands-on
- Follow food safety, hygiene and workplace procedures
- Pitch in for functions, special events and extra service demands
- Offer practical ideas for seasonal dishes and a better menu
- Hold food quality steady when it gets busy, move between venues as needed and cover rostered shifts, including weekends, early mornings and late evenings
Requirements & Eligibility
- Proven commercial kitchen experience
- NZ Register Diploma or a minimum of 3 years relevant professional experience
- An employment history that is genuine and backs up the level of kitchen experience claimed, with evidence available for qualifications and past jobs
- Strong hands-on ability in cooking and food preparation
- Experience handling busy service periods, and confidence across breakfast, lunch and dinner
- Good understanding of portion control, presentation and food quality
- Able to work efficiently without letting professional standards slip
- Strong communication and teamwork
- Prepared to take responsibility and lead during service
- Experience supporting or training other kitchen staff
- Knowledge of food safety, hygiene and commercial kitchen practices
- Flexible about weekends, early mornings, evenings and rostered shifts
- Baking or dessert experience is an advantage
