Key Responsibilities
- Run your own kitchen section from morning prep to the last order
- Plan each day's mise en place around what service needs
- Cook menu items with sound commercial techniques
- Keep portions, quality and plating consistent
- Hold the pace through high-volume and peak services
- Tell senior chefs how ready your section is and what it needs
- Work well with chefs, apprentices and front-of-house staff, and guide apprentices through kitchen tasks and set procedures
- Keep yourself and your station clean, and follow food safety, HACCP and workplace health and safety rules
- Store food correctly, rotate stock and keep the kitchen orderly
- Help the kitchen run smoothly from one day to the next
Requirements & Eligibility
- Certificate III in Commercial Cookery or an equivalent qualification
- Minimum 2 years of genuine commercial kitchen experience, including time in a high-volume hospitality setting
- Able to run a kitchen section with limited supervision
- Strong practical cooking and knife skills
- Understanding of professional food preparation and service procedures
- Able to meet quality and presentation expectations every time
- Employment history and experience must be capable of verification
- Qualifications and relevant supporting documentation must be available where required
- Strong communication and teamwork
- A reliable, responsible and professional approach to work
- Able to stay organised and composed during busy services
- Available for rotating shifts including nights, weekends and public holidays
- Full working rights in Australia, and willing to complete a 6-month probationary period
