A hotel kitchen in Cairns needs a Chef de Partie who is ready to own a section and keep it running well when service gets loud. Work spans restaurant dining, conferences, functions and events, so no two services look the same.
The employer will look closely at your practical skills, qualifications and work history. Candidates requiring sponsorship may be considered based on individual eligibility.

Key Responsibilities
- Take full charge of your own kitchen section
- Plan the day's prep and mise en place, and see it through
- Cook and plate to the kitchen's standards for quality and presentation
- Keep dishes consistent whether it is a restaurant service, an event or a function
- Pitch in on conference catering and other high-volume service
- Control portions, make good use of ingredients, rotate stock and limit food waste
- Work closely with senior chefs and fellow cooks
- Back up junior team members and help set a positive kitchen mood
- Uphold food hygiene, safety and cleanliness, and follow workplace health and safety procedures
- Stay organised and effective when service peaks
- Take on more responsibility as your capability shows
- Cover lunch, dinner, events and other operational needs, helping the wider kitchen run smoothly
Requirements & Eligibility
- Proven record as a Chef de Partie, or an equivalent commercial kitchen professional
- Certificate III in Commercial Cookery, or an equivalent qualification
- Able to run a kitchen section on your own
- Practical cooking and food preparation skills, plus commercial kitchen time in varied service settings
- Understands food safety, hygiene and WHS requirements
- Holds quality and consistency steady under pressure
- Communicates and works in a team well, with a reliable, professional attitude to kitchen duties
- Can work evenings, weekends and public holidays as required
- Leadership or supervisory experience is advantageous
- Australian work rights where applicable
- Documents or references that support your qualifications and work experience
- A commitment to growing professionally and advancing your career, and willingness to take on greater responsibility as your performance proves itself
