In Wollongong, a growing hospitality business needs a Breakfast Sous Chef to take charge of its morning kitchen. You would partner with the Head Chef, lead a small crew and tighten the way each breakfast service starts.

Key Responsibilities
- Own the daily running of the breakfast kitchen and lead prep and service to a high standard
- Partner with the Head Chef on kitchen operations and food direction
- Lead a brigade of up to five breakfast chefs and train junior cooks
- Shape and refine breakfast menus and seasonal specials
- Keep quality, presentation and portions consistent
- Organise daily prep and see all mise en place completed
- Control stock levels, ordering, rotation and wastage
- Uphold food safety, hygiene and cleanliness
- Keep workflow smooth through busy breakfast services and look for better kitchen systems and processes
- Step in for the wider kitchen team when needed
- Help keep the kitchen respectful, motivated and professional
Requirements & Eligibility
- Minimum 2–5 years' experience in a Sous Chef or senior chef position
- Proven time in breakfast or brunch-focused kitchens, with strong knowledge of modern Australian breakfast and café-style cuisine
- Earlier supervision or leadership of a kitchen team, and the ability to train, mentor and motivate junior chefs
- Strong food preparation and presentation skills
- Solid knowledge of food safety and kitchen hygiene requirements
- Experience with stock control, ordering and minimising food wastage
- Organised, with strong time-management abilities
- Confident communication and leadership
- Able to perform well in busy service periods and comfortable with early morning shifts
- Professional, reliable, team-oriented approach
